Chocolate Chip Lava Cookies.

Hands down....one of the BEST treats I have made in a long time.

It was a cold rainy day
A friend of mine posted on facebook that she was baking
I'm  a follower
A complete copycat
What can I say
I decided to bake too.

Chloe and I referred to our treat board on Pinterest
We chose Chocolate Chip Lava Cookies.

These are simple and yummy.
They bake them little selves into the perfect cup
in the perfect size to hold a scoop of ice cream.

The recipe made 12, just enough to last 1 day in my house.
Yes .... one day.

I do believe these would be perfect for a party they are really really
cute with scoop of ice cream on top.

My apologies for not getting a photo of mine to show you
but I hate to touch my camera when my fingers are covered with
chocolate. (wink)

Instagram Weekly





I finished the last book of the Hunger Games Trilogy.
It's sad to finish a good book.
I miss the characters.

Amazing.



There are lots of days as a Mom
that I look at my girl and I watch what
she is doing and I think......
She's amazing.



When I see her playing with her 100 + plastic
animals I think
She just might be a veterinarian.


When I witness her reading
and writing stories just for fun
with no ordering or prompting
from me.
I think she could be a writer some day.


When she begs to make breakfast
all by herself
I wonder if she will be a chef.


When I watch her play softball
I imagine her playing in The Olympics.
She could you know.
The sky is her limit....and I will see to it.
Shoot for the stars baby....you are amazing !!!

Instagram Weekly

Cue the sad song
Vacation is over.
Here is Instagram Weekly (mostly vacation version)
In a new larger format just for you Amy.


We took a short ferry ride to Fort Fisher
to visit the aquarium.
I saw 2 seagulls sitting on the side of the boat.
While I was getting my phone so I could make them famous
(put them on my blog)
3 more joined them.


Something about a wide open beach
screams cartwheels and flips.
You  know it does.


Cold Beer.
Don't like it hot or cold.
Don't drink it.
It was more the shade of green on the woodwork that caught my eye.


True vintage and vintage inspired
signs make me smile.


Look.
We all had a hole in one, or did we ?


I have a "thing" for notebooks.
My daughter has inherited the same "thing".


Carnival rides get me just like vintage signs get me.


Softball season is in full swing.
I will not brag.
But if you want to know how good she is, just ask me.


While we were away my roses showed up.

Baking Eggs --- A Pinterest Do


When I saw this on Pinterest I knew
it was a disaster and a mess
waiting to happen.

Well when curious minds want to know......
I tried it.

Set your oven to 325.
Carefully place your eggs between the bars of your rack.
I put a pan under mine....if you trust this method .....meh....don't worry with that.
Bake the eggs for 30 minutes.

One of mine cracked but at that time the egg was cooked so no mess.


Have a  bowl of ice water prepared.
Carefully and with tongs move your eggs from oven to bowl of ice water.

The brown spots on the eggs are where condensation forms from the eggs being
cold and those drops turned brown.
The minute your eggs hit the water that magically disappear.

Let your eggs sit for 10 minutes.

Shell them under cold water.



The eggs were creamier.
Did they shell easier ? No
Did I save time? No
Did they look the same as boiled eggs ?  yes and no....there were brown spots on some of the whites, not a
clue where these came from I assume from the heat somehow.  I did not see any of the gray rings you sometimes
see around the yolk.

All in all baking eggs is a Pinterest Do....I did like the creaminess of the eggs.
